(1) Is this item worth holding? (2) Will it have any use besides the quest I received it when completed? (3) Is there a site where I can know for sure if I can get rid of some quest itens that still in my bag like fairy compass?
Bag and storage space is an ongoing issue for most players. Between Pots, Food, Gear, Daily Quest Items, Quest Items, etc. you run out of space quite quickly. One suggestion is to be pretty ruthless in what you allow into/keep in your BackPack/Chests/Bank/Housemaids, etc. For "Quest Items" that means if you can't identify what current or near current Quest it applies to ==> it has not "earned" a slot in your inventory.
How do you ID what is current/near current?
Check your Quest Log and see what each Quest requires. Ask folks @ or near your Questing Level in Game. Check the Runes of Magic database <<
http://www.runesdatabase.com/ >> based on the Item or the Quest (Often it will give you other useful details).
Keep in mind that 100% accurate, Official, detailed documentation for the multiple thousands of items in the Game is ~ non-existant. The BEST you can hope for is reasonably accurate sources developed from the input/experiences of other Players.
Regarding your specific Questions:
(1) Probably not...
- - Sometimes you "keep" or get Quest items after you have completed the Quest they apply to.
- - "Right-click to use this item." will tell you more... If it says "You have completed this Quest.", you can definitely trash it. Otherwise it should give you clues about it's usefulness.
- - If you find you have gotten rid of something you are no longer finding for a particular Quest, drop and re-accept the Quest. That "resets" the drops so you can get the items again.
(2) Probably not...
- - Majority of Quest Items are "single use" for a particular Quest. (There are some exceptions.)
(3) Probably yes...

Segregating your items DOES make them easier to deal with. You still need to "process" them at some point or you'll find your bag is full of those pieces of lint.
