Why do they always do things in the middle of the night here though?
Difficult to deny, due to multiple timezones inside US. I work everyday with 2 tools, the windows clock with 3 times (EU, US, AU) and additional a windows 8 app with function to see "Which time is it in the three zones, if ..."
We use the PDT for orientation, but i.e. New York is +3 hours. Perfect time is maybe 5pm PDT, but this is 2am local time in EU. Therefore the perfect time for all US zones will be a very rare case. Instead we look: Which time is it at start of office hours, i.e.
8am EU: 11pm PDT >> ok for some, not ok for the most
4pm EU: 7am PDT >> ok for some, not ok for the most
There is no solution? Of course there is. We go home, enjoy our supper and make the event at 6/7pm EU time, which is 9/10am PDT. Like I said, the perfect time is another, but we have the time zones in mind and this can also result in rotational use of the different possible times.

Last time I lived there, stores closed at 5:30
Isn't true any longer for general. In the most cities you have the possibility to visit stores between around 8am until 8pm. Some 24hour-open gas stations sell most things ... not cheap
And some of us *angel-face* ignore times and vacation if there is something to do for the community - hope I could help with my answer a bit to understand what is possible and it make it easier for you to address your wishes.
